Walnuts can play an important role in the search for new sources of protein for the production of innovative foods. Stefan Wagemans, R&D Manager of the Plant-based Unit at Bösch Boden Spies, presented new concepts with walnuts at the conference in his highly acclaimed presentation “The plant-based market revolution with walnuts”.
The ideas for this came from the New Product Development Project, which the California Walnut Commission carried out together with Food Harbour Hamburg. Wagemans spoke about the advantages of using California walnuts in innovative food products. The products not only fulfill consumers' justified desire for healthier clean-label products. They are also tasty and affordable.
At the networking breakfast, the conference participants were able to see for themselves how good walnut-based products taste. Walnut muesli with walnut milk and burritos with a meat-free walnut-based filling were served as refreshments. Many visitors also enjoyed walnut milk and snacks during the conference breaks.
A special highlight of the conference was the California Walnut Lounge, which served as a meeting point for the participants. During the breaks and evening networking sessions, they were able to meet in the inviting atmosphere of the lounge for personal discussions and an exchange of ideas.
The commitment of the California Walnut Commission was met with a very positive response from the conference participants. This was reflected in the demand for further information about the products and their possible applications. Numerous discussions revolved around potential collaborations and strategic partnerships that could contribute to the further spread of walnuts as an ingredient in modern plant-based foods.
